Recipe: Hertel Summer Sausage
Here is a great recipe from Terry Hertel, one of our Technitions.
We are thrilled to share the Hertel family recipe.
After trying this you will ask yourself – why is this called Summer Sausage?
It is good all year long.
Terry Hertel Summer Sausage
Ingredients:
5 Lbs. Meat (ground beef, deer, etc)
5 heaping Tsp. Morton’s tender quick salt.
2 Tsp. Liquid Smoke
4.5 Tsp. Mustard Seed
4.5 Tsp. Black Pepper
3 Tsp. Garlic Salt
Preparation:
Mix well and divide into 3 parts
Put each into 3 double plastic zip lock bags.
Close separately with air still in.
Refrigerate for 3 days.
Kneed well each day in closed bags.
On 4th day, form into 6 rolls.
Bake on rack at 150 degrees for 8 hours.
